Description
If white are too big a splurge, go try black truffles or even crimini mushrooms as a substitute.
Ingredients
- 2 oz olive oil
- 1 c onion, minced
- 2 garlic clove, minced
- 2 c arborio rice
- 1 c white wine
- 3 c chicken stock
- 1⁄2 c grated parmesan
- 1⁄4 c cup parsley, chopped
- 4 T butter
- 2 oz shaved truffles
Instructions
In a large saucepan, heat oil over medium heat. Add onions and garlic and stir until translucent. Add rice and toast for five minutes, stirring often. Add broth, a ladle at a time adding more as it's absorbed. Once all broth is absorbed and rice is al dente, remove from heat and stir in cheese, parsley and butter. Top with shaved truffles.
