Description
A hearty vegetarian alternative for Thanksgiving. It's so good we can't guarantee carnivores at the table won't want a piece too!
Ingredients
- tube prepared polenta
- 1 sliced onion
- 1 sliced red bell pepper
- 2 sliced zucchini
- 2 sliced yellow squash
- 1⁄2 c tomato sauce
- 1 c shredded smoked mozzarella
Instructions
Preheat oven to 375°F. Warm 3 Tbsp. vegetable oil over medium-high heat. Add onion and red bell pepper and sauté until softened. Add garlic, zucchini and yellow squash stirring until vegetables begin to brown.
Grease a cookign dish and add a bottom layer of sliced polenta. Add a layer of tomato sauce and a layer of vegetables. Sprinkle cheese and top with another layer of polenta. Repeat for a total of three layers of each component and top with additional cheese. Bake for 20 minutes or until cheese is browned and bubbly.
