Description
A great way to use leftover turkey and sweet potatoes, but packaged in a completely new taste experience!
Ingredients
- 2 c shredded leftover turkey
- 1⁄4 c salsa verde
- 4 large flour tortillas
- 1⁄2 c mashed sweet potatoes
- 1 c shredded cheddar cheese
- 2 T canola oil
- 1⁄2 c mayonnaise
- 2 T sour cream
- 1 lime, juiced
- 1 can chipotle pepper, chopped
- 1⁄2 t ground cumin
- 1 T chopped cilantro
- salt and pepper
- 1 green onion for garnish, sliced
Instructions
In a large bowl combine leftover turkey and salsa. To construct quesadilla, place one tortilla on work surface and sprinkle ¼ of the cheese on bottom, spread with half the mashed sweet potato, then add half the turkey mixture another ¼ of the cheese.
Top with another tortilla and brush with a bit of canola oil. In a large skillet over medium high heat add quesadilla oil side down then brush the top with oil. Cook for about 3 minutes until bottom begins to brown and cheese starts to melt. Flip and repeat.
In a small bowl combine mayonnaise, sour cream, lime juice, chipotle, cumin, and cilantro, and season with salt and pepper. Remove quesadilla from pan, cut into wedges and serve with chipotle dipping sauce. Garnish with green onions.
