Description

Julio from our pastry team shares his family's recipe for this simple yet delicious sweet potato recipe (for dessert!).

Ingredients

  • 10 sweet potatoes
  • 10 cinnamon sticks
  • 4 star anise (ground)
  • 1 c white sugar
  • 1 c water

Instructions

Preheat oven to 375 degrees. Mix the sugar, spices and water together. Place potatoes in a baking dish with 1-2 inch sides. Cover the sweet potatoes with the the sugar and spice mixture and bake, covered with aluminum foil for 45 minutes. When, allow potatoes to cool for a few minutes then slit each potato length wise. Fill the potatoes with the caramel sauce and close. Bake for an additional ten minutes and serve.

For the Caramel Sauce:
2 cups white sugar
3 tbsp whiskey

In a medium saucepan over medium heat, mellt the sugar in the whiskey and stir continuously until golden brown. About 10 minutes
