Description
Our best kept secret: shaved raw brussels sprouts are delicious. Plus, they're full of fiber and are the perfect vehicle for roasted almonds and shaved Peccorino.
Ingredients
- 2 lb brussels sprouts
- 3 T olive oil
- 4 T lemon juice
- 1 T fresh basil, minced
- 1⁄3 c fresh chives, minced
- 1 1⁄3 c roasted almonds, chopped
- 4 oz shaved pecorino
Instructions
Shred the brussels sprouts with a mandoline or knife. In a large bowl whisk together all ingredients except for the nuts and cheese. Add the brussels sprouts, nuts, and cheese and toss to combine.
