Description
One of those mid-winter dinners to look forward to all day, soba noodles are not only comfortingly warm, but also suprisingly hearty.
Ingredients
- 10 oz soba noodles
- 1 T freshly grated ginger
- zest and juice of 1/2 a lemon
- 1⁄2 c choppd scallions
- 1 t soy sauce
- 2 t honey
- 3 T rice wine vinegar
- 1⁄3 c sesame oil
- 1 container of tofu, small diced
Instructions
Cook the soba noodles according to package instructions. Combine all remaining ingredients in a food processor and blend until smooth.
Preheat a medium skillet to medium heat and pan-fry the tofu until golden brown. In a large bowl, combine the noodles, sauce and tofu.
