Ingredients

  • 5 lb fresh yuca, peeled
  • 1 white onion
  • 1 gal vegetable stock
  • 1 bay leaf
  • 1 lb red onion
  • 1⁄2 lb butter
  • 1⁄2 c white vinegar

Instructions

In a large pot, add the yuca, white onion (cut in half), vegetable stock, bay leaf and salt and bring to a boil, cooking until the softens. Julienne the red onion and add to a large saute pan over low heat. Cook with butter until softened and add salt and pepper. Add the white vinegar. Top the yuca with the onions and serve.
