Description
This incredible rich dish is fittingly named for the richest man at the time this recipe was created in 1899--John D. Rockefeller.
Ingredients
- 1 clove garlic, minced
- 2 c fresh spinach
- 1 bunch watercress
- 3⁄4 c chopped scallions
- 1 1⁄2 sticks butter at room temperature
- 1⁄2 c bread crumbs
- 2 T pernod
- 1 lb rock salt
- 24 oysters
- 1⁄2 c grated parmesan cheese
Instructions
Preheat over to 450 degrees. Finely chop spinach and watercress and add green onions and garlic. Transfer to a bowl.
Whisk together butter, breadcrumbs and Pernod. Add spinach mixture and stir to blend. Season with salt and pepper.
Sprinkle rock salt over large baking sheet and arrange oysters in half shells on top of rock salt. Top each oyster with 1 tablespoon spinach mixture and sprinkle parmesan. Bake until spinach mixture browns on top, about 8 minutes.
