Description
These scones are a hostess gift maker's dream: prepare the dough in advance, freeze and bake off as needed.
Ingredients
- 1 1⁄2 T lemon zest
- 2 1⁄2 c whole wheat flour
- 1⁄2 c sugar plus 3 tbsp
- 1 T baking powder
- 1⁄3 t salt
- 6 T butter, diced
- 1 1⁄4 c fresh cranberries, chopped
- 1 egg
- 1 egg yolk
- 1 c heavy cream
Instructions
Preheat oven to 400 degrees. In a food processor, combine flour, 1/2 cup sugar, baking powder, salt, butter and zest and move to a large bowl.
In a separate bowl toss together the cranberries and 3 tbsp sugar and add to the flour mixture. Using the same bowl, beat together the egg, yolk and cream. Add this mixture to the flour.
Flour a surface and hands. Pat dough into a 1-inch-thick round and cut scones into desired shape. If freezing, store in a tupperware or individually wrap in plastic. If baking, arrange 1 inch apart on a parchment-lined baking sheet.
