Description
These turkey burgers are anything but bland with the addition of spicy jerk seasoning and creamy avocado.
Ingredients
- 1 lb leftover turkey, chopped fine
- 2 T jerk seasoning, divided
- 1 small green apple. peeled and grated
- 1⁄2 c finely chopped scallions, divided
- 1⁄2 c mayonnaise, divided
- 1⁄4 c panko breadcrumbs
- vegetable oil
- kosher salt and freshly ground pepper
- 2 avocados
- 4 hamburger buns or challah rolls, split
Instructions
Preheat a sauté pan to medium high. Mix the turkey, jerk seasoning, apple, ¼ cup scallions, ¼ cup mayonnaise and the panko in a bowl; season with salt and pepper. Form into four 1-inch-thick patties and coat in panko. Refrigerate until chilled.
Whisk the remaining mayonnaise and jerk seasoning in a large bowl, set aside. Heat the vegetable oil in the sauté pan and add the turkey patties until browned and warmed through, 2 minutes per side. Brush the cut sides of the buns with jerk mayonnaise; toast on a grill or in the pan, about 30 seconds. Serve the burgers and avocado on the buns.
