Description

While this side couldn't be easier, the flavor of just-cooked haricot verts, butter and shallots is made in heaven!

Ingredients

  • 1⁄2 lb haricot verts, trimmed and tailed
  • 1 T butter
  • 2 shallots, minced
  • salt and peper to taste
  • juice of half a lemon

Instructions

Bring a pot of well-salted water to boil. Boil haricot vert until al dente, about three minutes. Run under cold water and drain. In the empty pot melt two teaspoons of butter over medium heat. Add the shallot and saute until translucent, about one to two minutes. Add the drained and cooled haricot vert back into the pot along with the butter and shallots. Season with salt and pepper and serve.
