A lighter, smokier take on this late-summer classic.

Ingredients

  • 1 zucchini
  • 1 yellow squash
  • 1⁄2 eggplant
  • 1 red pepper
  • 1 T extra virgin olive oil
  • 1 T capers
  • 1 T thyme
  • 1 t minced anchovy fillet

Instructions

Preheat grill to medium heat and oven broiler to high. Slice the zucchini, yellow squash eggplant and red pepper into 1/2 inch planks. Toss in olive oil and season with salt/pepper. Grill veggies until slightly charred and remove from heat. Dice into 1/2 inch cubes and move to a medium bowl to toss with the capers, thyme and anchovies. Place in broiler for two minutes, season to taste with salt and pepper.
