Description
The side is totally versatile: it's great made in advance since the flavors only get better as it sits and can also be served at room temperature.
Ingredients
- 1 lb winter squash peeled and diced
- 8 oz parsnips peeled and diced
- 8 oz rutabagas peeled and diced
- 1 red bell pepper diced
- 1 medium leek washed and cut into 1/2 inch pieces
- 3 T plus 2 teaspoons extra virgin olive oil
- 2 garlic cloves minced
- 2 c (heirloom) corn kernels
- 2 T fresh parsley chopped
- 1 T fresh thyme chopped
- 1 T fresh oregano chopped
Instructions
Preheat oven to 400 degrees. Toss the first five ingredients plus 3 tablespoons oil and garlic on a large rimmed baking sheet, spread in a single layer. Sprinkle with salt and pepper. Roast until vegetables are almost tender, stirring occasionally, about 30 minutes. Stir in corn and roast until all vegetables are tender, about 10 minutes.
Mix roasted vegetables with parsley, thyme and oregano and season with salt and pepper. Serve warm or at room temperatire.
