Cranberry and Verjus Vinaigrette

Ingredients

  • 1 c fresh cranberries
  • 8 T verjus or white wine
  • 5 T light brown sugar
  • 8 T white balsamic
  • 6 T local honey
  • 1⁄4 t cranberry anise bitters
  • 2 T lemon juice
  • 1 T water
  • 4 T olive oil
  • kosher salt and pepper

Instructions

In a small saucepan sauté the cranberries with the verjus and brown sugar until thickened, about 10 minutes. Set aside to cool.

In a small bowl whisk together the vinegar, honey, sautéed cranberries, bitters, lemon juice and water. Gradually add the olive oil in a thin stream. Whisk until emulsified.  Season to taste with salt and pepper.
