Ingredients
- 1 c fresh cranberries
- 8 T verjus or white wine
- 5 T light brown sugar
- 8 T white balsamic
- 6 T local honey
- 1⁄4 t cranberry anise bitters
- 2 T lemon juice
- 1 T water
- 4 T olive oil
- kosher salt and pepper
Instructions
In a small saucepan sauté the cranberries with the verjus and brown sugar until thickened, about 10 minutes. Set aside to cool.
In a small bowl whisk together the vinegar, honey, sautéed cranberries, bitters, lemon juice and water. Gradually add the olive oil in a thin stream. Whisk until emulsified. Season to taste with salt and pepper.
