Makes 1 quart
1 ½ cups Local farm strawberries
1 cup Coconut milk
¼ cup Coconut Sugar
1 Vanilla Bean, scraped
½ cup Vegan cream cheese or Tofutti
1 pinch Salt
Blend everything together in a food processor or blender until smooth. Adjust sweetness and flavor with more strawberries as needed.
Freeze according to your ice cream machine instructions.
