2 small Kohlrabi
2 small New apples (tart), cored but unpeeled
1 cup Plain yogurt, dairy or non-dairy
1/4 cup Apple juice
3 Tbs chopped Parsley
Salt and pepper, to taste
1. Place yogurt in a colander, lined with a paper towel and allow excess water to drip out for about three hours.
2. Peel kohlrabies, and grate apples and kohlrabies to medium coarseness. A food processor attachment is immensely helpful with this.
3. Combine yogurt with apple juice and pour over the kohlrabi mixture, adding parsley and s&p. Mix well. Allow to marinate for around an hour in the refrigerator before serving.
