Spring Asparagus Soup

Serves 4

Ingredients

1 celery stalk, medium dice

1 small leek, medium dice

1 stick butter

1 cup heavy cream

1 pound asparagus, medium dice, blanched

1.5 tsp parsley, chopped

1 tsp dill

2.5 cups vegetable stock

½ cup spinach, blanched

Directions

1) Sauté celery and leek in butter. Add asparagus, cream, parsley and dill.

2) Add vegetable stock and spinach and simmer 20 minutes.

3) Puree mixture and serve.
