Salad of Heirloom Radishes, Goat Cheese, Arugula, Blackberry Vinaigrette

Ingredients

12 assorted heirloom radishes (varieties can include black, watermelon, French breakfast, icicle, etc.), sliced, halved, and cut into wedges

6 oz arugula

6 tbsp goat cheese

1/2 pint blackberries

1 cup blended olive oil

1/3 cup white balsamic vinegar

1 shallot, minced

Salt and pepper

Directions

1) For the vinaigrette, add minced shallot, vinegar and blackberries into a blender. Blend on medium until smooth, then slowly add oil to emulsify. Season with salt and pepper.

2) In a mixing bowl, add the arugula. Toss in radishes and drizzle with dressing. Plate each salad and top with goat cheese.
