If you’ve never roasted fennel before, prepare to be amazed and delighted.
1 lb of string beans
2 Bulbs of fennel
Juice and zest of 1 lemon
Salt, pepper, and chili flake to taste
1 whole shallot sliced
Top dish with parsley, dill, goat cheese, shaved parmesan or scallion
In a large bowl toss together trimmed string beans, sliced fennel, shallot, olive oil, salt and pepper.
Spread mixture on baking pan and cook for 25-30 minutes at 350°.
Once vegetables are tender, remove from oven and sprinkle crushed red pepper and serve with topping of your choice.
