Quiche en Paupiette

serves 4


2 cups croutons

1/4 cup roasted carrots, roughly chopped

1/4 cup sautéed spinach

4 Tbs. goat cheese

6 large eggs, beaten 

salt and pepper to taste 

4 pieces of parchment paper


Lightly butter the parchment paper and place in a large muffin pan.

Fill the bottom of the parchment with the croutons, then the rest of the ingredients, evenly dispersed.

Pour the eggs over the ingredients and season with salt and pepper.

Bake in an oven at 350 for 8 to 10 minutes or until the egg is set in the middle.

Serve warm.
