Locally-grown bright greens can be hard to come by this time of year, so why not celebrate the best of what you can find in a cocktail? In honor of National Margarita Day this past Monday, I decided to whip up a festive margarita to combat the February blues.
1 tablespoon Kosher salt
1/4 cup micro cilantro
Zest of 1 lime
2 oz fresh lime juice
1 lime, cut into wedges
Slices of jalapeno or serrano pepper, to taste
2 oz tequila
Splash of Cointreau
1. Blend Kosher salt, half the micro cilantro, and lime zest in a food processor. Transfer to another container.
2. Rim a glass using a wedge of lime and dip into the cilantro salt.
3. In the glass muddle lime juice, the rest of the cilantro, and pepper. Add ice, tequila, Cointreau.
4. Shake and serve.
