Herb-Roasted Salmon

1/4   cup    Thyme leaves, chopped

1/4   cup     Rosemary leaves, chopped

1      cup      Flat-leaf parsley leaves, chopped

2      cups     Olive Oil

6       5-oz     Salmon Fillets, skinless


                      Pepper, freshly ground 


Combine the herbs with the olive oil. Completely coat the salmon pieces with half the oil and herb mixture and set aside to marinate for 20 minutes.

Preheat the oven to 425 degrees. 

Meanwhile, line a baking sheet with heavy-duty foil. Season the salmon with salt and pepper, place it on the sheet, and put the sheet in the upper third of the oven. Roast the fish for 8 minutes for medium-rare or up to 12 minutes to cook through. 

Serve with roasted sweet potatoes and a simple herb salad.
