Grilled Lemon and Lime Marinated Tofu with Tomato Salsa

This is as easy as it sounds and quite a versatile dish for summer buffets and barbecues.

For the Tofu:

2        packages Tofu, extra firm, cut into ½ inch thick slices

1 1/2             Lemons

2                   Limes

2                  Garlic cloves, finely chopped

2          in            Ginger, finely chopped

2          Tbsp       Canola oil

1           tsp          Sesame oil

3-4       Tbsp       Soy sauce

1/4-1/2  cup     Spring water

2           Tbsp   Balsamic vinegar

                        Sea salt, to taste

                        Black pepper, to taste 

For the Tomato Salsa:

4                     Tomatoes, peeled and seeded

12                    Basil leaves, torn

1                      Small red onion, chopped

3        Tbsp       Lemon juice

1-2     Tbsp       Rice vinegar

2                      Jalapeños, finely chopped  

                        Cilantro, to taste

                        Sea Salt, to taste

                        Pepper, to taste


Place the tofu into a casserole dish so the squares are flat and not piled on one another. Add the lemon and lime juice  (do not be afraid to use the pulp as well).  Add the remaining ingredients and then a bit of spring water to bring the liquid to the top of the tofu. Let marinate overnight, turning the tofu once during the process. 

Mix all Tomato Salsa ingredients in a bowl and chill until ready to serve.

When ready, grill the tofu over a small mesh screen; 4 minutes per side, turn only once.  Place on a large ceramic platter and cover with the tomato salsa. Garnish with fresh basil.
