My girlfriend and I are granola junkies. We tried a million varieties until we finally came up with our own version using stuff we had lying around in the pantry. It's super easy to whip up and take on our power walks.
½ cup Honey or real maple syrup
2 Tbsp Olive oil
3 Tbsp Molasses
1 tsp Sea salt
1 tsp Vanilla extract
1 Cinnamon stick
1 qt Rolled oats (not quick cooking oats or instant)
1 cup Pecan halves, toasted
1 cup Cashew halves, toasted
½ cups Walnut halves, toasted
¼ cup Sunflower seeds, toasted
¼ cup Pumpkin seeds, toasted
Boil ingredients from honey to cinnamon stick for 3 minutes. Discard cinnamon stick.
Combine oats, nuts and seeds and toss with liquid mixture.
Spread on sheet pans and toast in a 300 ºF oven for approximately 10-15 minutes, until golden brown, stirring twice. Enjoy!
