Crudités with Tonnato Sauce

Tonnato is a smooth sauce of olive-packed tuna, mayonnaise, capers and anchovies popular in Piedmont, Italy akin in flavor to a Caesar dressing. Traditionally it is served with slices of roasted veal, however, in this version, we accompany it with raw summer vegetables.

Ingredients:

¼ cup extra-virgin olive oil

One 8-ounce jar of tuna packed in olive oil, drained

3 tablespoons fresh lemon juice

4 oil-packed anchovies, drained

2 tablespoons capers, rinsed

¼ cup mayonnaise

Assorted raw vegetables, such as carrots, cucumbers, peppers, etc.

Method:

Place all of the ingredients in a blender and mix until very smooth. Serve immediately with raw vegetables, or reserve in the refrigerator for up to 4 days.
