I love to saute, grill, and roast my CSA vegetables but sometimes it's just as satisfying to enjoy them raw. My favorite way to eat raw veggies is by grating them. It completely changes the texture of the vegetable by making it conveniently thin, eliminating the need to cook them.
This slaw is made up of grated radish and carrots. All you need is a sharp box grater on the coarse side and a bowl! Refrigerate this slaw and use it to jazz up a sandwich.
3 tablespoons Mayonnaise (or opt for a vinegar based slaw and use rice vinegar)
2 tablespoons Olive Oil
Juice and Zest of 1 lemon
1 handful of Parsley and cilantro
1/4 cup Slivered almonds
Salt and pepper to taste
1 teaspoon Grated ginger
1. Whisk mayonnaise, oil, lemon zest, and lemon juice in a bowl until smooth. Add carrots, radishes, cilantro, parsley, almonds, salt, and pepper and stir to mix.
I love using this slaw in pita bread with homemade hummus.
