Citrus-Glazed Beets

Tangy sweet citrus pairs great with earthy beets in this dish, not to mention the tie-dye magic that happens in the pan while the juice cooks down to a glaze! These beets are excellent served hot or cold.

Adapted from Vegan with a Vengance


5 average-sized beets, peeled, quartered, and sliced about ¼-inch thick

16 ounces honey tangerine juice

1 teaspoon finely grated lime zest

2 teaspoons maple syrup

1 teaspoon salt

1. Place all ingredients in a large pan, cover, and bring to a low boil.
2. Simmer, stirring ocassionaly, for about 12 minutes, or until the beets are tender.
3. Uncover and cook until the liquid has reduced to a glaze, about 7 minutes more.
