Chocolate Cake

For cake:


1 and 1/2 cups all-purpose flour

1 and 1/2 tsp baking soda

1/2 tsp salt

1 and 1/2 tsp instant espresso powder

3/4 cup unsweetened cocoa powder

1 and 1/2 cups dark brown sugar

1 and 1/2 cups water, boiling 

6 tbsp coconut oil, melted

1 and 1/2 tsp cider vinegar


Preheat oven to 350F.

1) Mix flour, baking soda, salt, espresso powder and cocoa powder.

2) In another bowl, mix brown sugar, water, coconut oil and cider vinegar.

3) Combine the two bowls and pour into a parchment lined 8" round springform pan.

4) Bake in the oven for 30 minutes.

For the frosting:


1/4 cup hot water

5 tbsp coconut butter

1/4 cup dark brown sugar

1 and 1/2 tsp instant espresso powder

1 and 1/2 tbsp unsweetened cocoa powder

6 oz bittersweet chocolate (70%), chopped


1) Combine everything except for the chocolate in a small sauce pot. Bring just to a boil, remove from heat and add chocolate. 

2) Let the mixture sit for 2 minutes, then whisk to combine. It will become firmer as it cools. When it's at room temperature, glaze the cake. Garnish with crumbled pistachios or rose petals if you'd like. Let it set before slicing.
