Cantaloupe Ginger Mint Salad

When my weather app tells me it’s going to feel like 103° outside in the middle of summer vegetable and fruit season, this is the dish I’m making. On hot days, let’s keep the heat producing appliances to a minimum (without ordering take-out).

Ingredients:

1 whole cantaloupe- cut into 1/2-inch cubes

Zest from 2 whole limes

4 tablespoons fresh lime juice

A handful 2 1/2 teaspoons grated peeled fresh ginger

1 of mint, roughly chopped- about 1 cup

1 tablespoon of honey

Salt to taste

Method:

Cut up cantaloupe into 1/2-inch cubes and place into large bowl.

Add lime juice, lime zest, mint and toss.

Mix in salt, ginger, honey, and salt to taste.

Refrigerate salad for up to 3 hours before serving.

Prepare yourself for the most refreshing and juicy bite of the season.
