Boozy Popsicles Make Summer Bright

It’s hot, but you still want a cocktail. Why not make it an icy, tasty delight with a boozy popsicle? Combining seasonal flavors, it’s easy to make quick frozen treats for a party - or all for yourself after a long summer day.

Put your freezer on high and dig into these cool treats. Since alcohol doesn’t freeze, the more that’s in there, the less frozen your treats will be. Keep this in mind if you adjust the amounts!

Strawberry Basil

1 C vodka

1 C fresh or frozen strawberries

½ C simple syrup

juice of 1 lime

1 handful of basil leaves, chopped or torn

Purée ingredients until well combined. Pour into popsicle molds. Freeze for 2 hours then place sticks in each popsicle. Leave in freezer another 4 hours until frozen.

Mango Strawberry Breeze

2 C fresh or frozen mango

1/2 C fresh strawberries, hulled and roughly chopped

1 C vodka or tequila

½ C simple syrup

1/3 C lime juice

2 T water

Puree mango, strawberries, vodka, lime juice, simple syrup and water until smooth. Freeze for 2 hours then place sticks in each popsicle. Leave in freezer another 4 hours until frozen.

Hibiscus Limeade Cooler

4 C water

1/2 C gin

1/2 C dried hibiscus flowers

1 C sugar

1 C lime juice

Bring water to a boil. Add sugar and steep flowers in hot water for 10-20 minutes. Let cool and add lime juice and gin. Freeze for 2 hours then place sticks in each popsicle. Leave in freezer another 4 hours until frozen.


Kahlua Pops

2 C brewed strong coffee

6 T sugar

¼ t cinnamon

¼ t cardamom

2 t vanilla extract

¼ C milk

2 T Kahlua

1/4 C mini semisweet chocolate chips (optional)

Mix ingredients until well combined. Stir in chocolate chips if using. Freeze for 2 hours then place sticks in each popsicle. Leave in freezer another 4 hours until frozen.
