JUNE 2018 FARM FESTIVAL | TOMATOES

Every month, the Great Performances cafés create specials that celebrate a seasonal ingredient. In August, each café will offer a menu item featuring tomatoes that is unique to their own cultural connection to food. 

Our monthly celebration of seasonality.

TOMATO & WATERMELON SALAD


INGREDIENTS:

  • 1/4 cup white wine vinegar
  • 2 1/2 tsp sugar
  • 1 tsp kosher salt
  • 2/ cup red onion, sliced thinly
  • 1 watermelon, in chunks
  • 1 ripe beefsteak tomato, in chunks
  • 1/3 cup olive oil
  • 4 cup basil, cut into / slices
  • 2 cup mint, cut into / slices
  • 1/2 cup ricotta salata, grated
  • 1/4 tsp cayenne
  • black pepper, freshly ground, use as needed
  • salt, use as needed


INSTUCTIONS:

  • COMBINE vinegar, salt, sugar and cayenne in a small bowl, and mix well
  • ADD red onion to the vinegar mixture, and let sit for 30 minutes
  • COMBINE vinegar mixture, olive oil, basil and mint with the tomatoes and watermelon in a large bowl, and use hands to gently toss
  • ARRANGE salad onto chilled serving plates
  • TOP with grated ricotta salata
