All Purpose Pickle
Yields 2 cups of pickling liquid
Note: this recipe yields a sweeter style pickle, more akin to a traditional bread and butter pickle. If you prefer your pickles less sweet, reduce the sugar in the recipe by up to half.
1 cup vinegar (apple cider, white wine, red wine, or distilled vinegars all can be used)
1 cup water
1 cup sugar
1 Tbs salt
1/2 Tbs pickling spice*
2 cups of desired vegetable, cut or sliced into small inform pieces
1. Combine all of the ingredients in a medium sauce-pot and bring to a light simmer to dissolve the salt and sugar. Pour the hot pickling liquid over the vegetables and let cool to room temperature. Reserve in the refrigerator for several weeks.
*Pickling spice can be purchased at most supermarkets. However, feel free to make your own based on what you like! We really like celery seed, coriander, mustard seed, and black pepper in equal proportions.
