2 sticks butter
1 cup powdered sugar
2 and 2/3 cup flour
4 tbsp + 1/3 tbsp cocoa powder
1) Cream butter with sugar until fluffy. Add eggs one at a time.
2) Mix in flour to incorporate.
3) Using a pastry bag, pipe 1-inch sized cookies on the papered sheet tray 1.5 inches apart from each other.
4) Bake at 350F.
5) Sandwich cookies with apricot or berry jam. Dip in melted chocolate if desired.
