As a planner, working with a catering company that genuinely cares about the preparation, style, and nutrients is extremely special. This experience in the pre planning process allows us (the planners), the client and the caterer to work together beginning with the menu conception, the tasting, followed by the presentation and enjoyment of the cuisine on the wedding day. We at Private Receptions, a Wedding Planning and Design company based in Manhattan, love these opportunities and value those chefs who take a cue from the local and sustainably grown.
Our goal is to do all we can to make sure the food (what the reception centers around) exceeds the couple's expectations by being knowledgeable about the challenges of the menu. Is the course hot or cold? Is it designed to be eaten immediately after it's plated? If so we had better make sure guests are seated and not on the dance floor when it arrives at the table. The timing of the food in conjunction with the speeches, dances, cake cutting, etc. create the rhythm and flow of the entire event, and like stage managers of a ballet, we make sure this performance is flawless.
As new trends emerge (dessert bars, everything in miniature) it's important to communicate with the caterer and couple to make sure everyone's on the same page about ideas, flavors, timing, and what the wedding smells, feels, and tastes like. We take a holistic and fully rounded approach to all of our events molded specifically to each couple.
