
A perfect dessert for Earth Day, this cake has a delicious streusel topping that takes the place of frosting. Worms optional!

8 oz. butter, softened
1 cup sugar
3 large eggs
2 teaspoons vanilla
1 3/4 cups cake flour
¼ cup sifted cocoa power
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 cup sour cream
1/2 cup chocolate chips
Streusel Topping
1/2 cup packed brown sugar
1/2 cup sifted flour
2 teaspoons cocoa
1 teaspoon cinnamon
4 oz butter, softened
3/4 cup mini chocolate chip (can use regular chocolate chips)
3/4 cup finely chopped walnuts or pecans
Gummi Worms
Pre-heat the oven to 300 degrees. Grease a 10 x 4-inch baking pan and set aside. In a large mixing bowl, cream the butter, sugar, vanilla and eggs for about 5 minutes. Meanwhile, in a bowl, sift together the flour, cocoa powder, baking powder, baking soda and salt. Add the flour mixture along with the sour cream to the creamed mixture and mix until well combined. Stir in chocolate chips. Transfer the batter to the prepared baking dish, and smooth out evenly.
Next, prepare the topping. Mix together the brown sugar, cinnamon, flour, cocoa and butter in a bowl fitted with a paddle attachment until the mixture is crumbly. Stir in the chocolate chips and chopped nuts. Sprinkle the streusel mixture evenly over cake batter in the pan and bake for 35-40 minutes. Place a few Gummi Worms over the top of the cake once it has cooled.
