Eloy Balbuena started with Great Performances in 2002 as a prep cook. His discipline and talents were noticed, and in 2004, he advanced to the position of Mae Mae Cafe chef.
Since then, Eloy has been the mainstay of the cafe. His steady demeanor and work ethic - under sometimes arduous demands - contributed significantly to the increase of sales and covers. His preparation and presentation of our dishes have become a standard that our guests associate with Mae Mae Cafe.
